What We Make


We produce pure NY State Maple Syrup from our sugar bush in Marion, NY. We produce pure NY State Black Walnut Syrup from our sugar bushes located all over Wayne County NY.

We offer our syrups in a range of sizes, grades, and infusions. Syrup taste is heavily influenced by a number of factors including location, tree type, time of year, and processing.

Aged syrups in used bourbon barrels offer a rich, complex and unique flavor.

NOT SO SIMPLE Syrup for Cocktails

Many cocktails are improved simply by replacing simple syrup with a maple, walnut, or specialty aged syrup. Kick up your Old Fashioned, Hot Tody, or Sazerac with some great syrups.

Maple Syrup the sweetener of choice

Maple Syrup has been made by man for 100s of years. The natural sap of the maple tree is gathered in the spring when the trees wake from their winter slumber. The sap is boiled down, and most of the water is removed to leave a sweet simple syrup. This syrup is sweet, sticky, and delicious. Maple Syrup has no additives or other ingredients and is truly a simple syrup. There are numerous health benefits of Maple Syrup as well!

  • 2018

    Started with 3 Big Red Maple Trees. 10 Taps total.

  • 2019

    Expanded to multiple sugar bush locations. 30 taps total. Upgraded evaporator and bottle line.

  • 2020

    Started tapping Black Walnut Trees, added 50 more taps. Expanded to 4 sugar bush locations and 75 taps. Introduced automatic level control and divided evaporator to operation.

  • 2021

    Expanded to 4 Sugar Bushes in Macedon, 1 in Fairport, and 1 in Marion. Installed a 125 tap tubing system in Marion Sugar Bush with automatic vacuum system, solar panels, and li-ion batteries.

  • 2022

    Ran 7 sugar bushes, 2 species, and 10+ team members. Had two teamsters collecting sap, and built a new Evaporator. Introduced R.O. system to cut the boil time by 50%.

  • 2023

    Improved Marion tubing system, improved flow. Relocated Sap storage and feed tanks. Teamster Stash delivered every drop of Sap to the operation this year. The Macedon sugar bush began running ATV+4 buckets. Ran 2 Sugar bushes, while Stacy was pregnant! Can’t wait for our little Sugar helper to arrive!
